We managed to run GTA 5 on an M1 MacBook Air 2020 model using Parallels with a frame rate of about 36 FPS and a resolution of 1080p. The performance was good in our tests, and we were able to play, but we encountered some minor issues like occasional stuttering.
Just to confirm that i can play GTA V on my macbook air 2011 fluently. I used the settings and commandline provided in the OP but i removed -disableHyperthreading from commandline.txt and set my resolution to 1440*900 (fullscreen). No crashes at all up untill now

I thought you couldn't play games on the Mac, except for a handful Thereās way more than a handful of games available for Macs. Plus thereās ways to run Windows only games such as Crossover, Parallels and Bootcamp. Doing the same as you, MB Air with 16 GB. Iām getting an average of 40 to 45 fps in GTA V Online.

GTA V isn't a groundbreakingly new title, so I think you should be able to hit 60 FPS on your MacBook Pro pretty easily. Even if you only have the 5300M graphics, you should be able to play at Medium settings. I would recommend that you start playing at 1440 x 900, but you can probably play at a higher resolution.
